A black sesame shortcrust shell filled with matcha custard, decorated with sugar cookie koi fish and lily pads floating on the green surface. 


Ruiqi: "My custard tart is something that I feel like you're gonna hate. It's a matcha tart." 


Ruiqi: "It might just be foolish, but honestly, I just kind of ran out of flavor combos in my head." 


Casey: "Semifinals. So what is the thought process? Are you determined to prove him wrong? Is this a high risk, high reward, or is this just plain old foolish?" 


Ruiqi: "Now I'm just slowly tempering the matcha custard that Paul's gonna hate. I don't think I'm gonna win Paul over with this, but I'm just hoping that if it's well baked and looks nice, he'll forgive me for doing a flavor that he absolutely hates." 


Ruiqi (decorating): "That looks more like a shark than a koi, but it's fine." 


Ruiqi (after judging): "He doesn't like much, but Prue liked it." 


Ruiqi went on to win Star Baker this week. No Hollywood Handshake was awarded for this dish.

Prue: "The decoration is good." Paul: "Very nice. Well, this is what you do. Let's have a look." Ruiqi: "Might have melted a little bit because I put it on while it was quite warm." Prue: "That looks nice and smooth." Prue: "Texture is lovely, but I think somewhere in it, you need a little bit of acidity or something. It's so creamy and rich." Paul: "Matcha, not a big fan. Texture is okay. I don't like the flavor at all." Paul: "But the biggest problem you've got is that pastry case being under baked too thick."
