{Katie}: "Mussels. Mussels are incredibly sustainable." 


{Katie}: "This is a version of mejillones en escabeche, which are pickled mussels. I made ratatouille and then blended that into the sauce to try to capture all of the flavors from all of the vegetables that I gathered."

{Padma Lakshmi}: "I think the sauce is beautiful. So is the knife work. These mussels are plump, juicy, lovely. They're not rubbery. They're cooked exactly as they should be. This is a very delightful dish." 


{Wiley Dufresne}: "I loved it. I thought it was delicious. The mussels were tender. You came in with very few ingredients. Seemed like you had a plan, which is great, and I think you definitely executed the plan. This was great."
