Mexican Taco Pancake

Mexican-inspired spice taco pancake with paprika and cumin oyster mushrooms, served with a pico de gallo, a green chili and lime salsa and a cheese crisp.
Jhane: "I have made a pancake before. I've never made a successful pancake before. They always fail at home. I cannot flip them. So I'm making Mexican taco pancake and then I'm going to add spices into the batter just to make it taste a bit more savoury. I am going to do vegetarian today. I'm going to use oyster mushrooms to kind of replicate pulled chicken."
Anna: "Jhane has marinated her oyster mushrooms in cumin and paprika, and she wants it to resemble pulled chicken. But oyster mushrooms release a lot of water, and they can be a little bit soggy."
Anna: "Each element I can taste in the bite. Initially, I'm getting the green tomato salsa with green chili. Then the pico de gallo comes through afterwards and it finishes with the mushrooms. The mushrooms have this lovely smoky, barbecued feeling. The paprika pancake has got lovely flavour. We asked you to make something interesting and unforgettable, and I think that's what you've given us."
Grace: "This is a really great invention. I have had a lot of tacos in the past, and using the pancake as a case gives this lovely soft sponginess. I feel like I'm at a street food truck. I'm a happy woman."
