Chris: "In front of you have a play on a Moroccan chicken tagine using boiled dumplings."
Chris (context): "Spinners are hand spun dumplings. They're just spun like this, typically. That's why they get their name. It's like chicken and dumplings with the flavors of Moroccan tagine — ras el hanout and saffron instead of couscous. I make these a lot at home with oxtail."
Chris seared chicken first, then built mise en place around the tagine spices.
"Beautiful dish."
Padma: "These dumplings, they're lovely, but also the flavors are great."
Kwame: "This sauce is beautiful — from the saffron, the Castelvetrano olives, that brininess, those pops of tomato. I taste a little Morocco in this dish."
