Ras el Hanout

Ras el hanout is a complex North African spice blend whose name roughly translates as 'head of the shop' - meaning the finest spices the merchant has to offer. No two blends are identical, but common components include cardamom, coriander, cumin, cinnamon, black pepper, ginger, turmeric, allspice, and sometimes dried rose petals. Widely used in Moroccan, Tunisian, and Algerian cooking, it is prized as a rub for duck, lamb, and chicken, and works brilliantly with roasted root vegetables. On this show, its warmth and depth elevated a duck breast despite the main protein not making it to all plates. For home cooks, a quality pre-made blend is an easy entry point; grinding your own from whole spices allows full customisation of warmth and floral notes.
