Victoria's hoping to hit the right note with the judges with her spiced loaf cake topped with a ginger glaze and plum compote.
Victoria: "This loaf cake is inspired by my study abroad in Japan. When we were in Kyoto, I bought this ginger liqueur, and I was, like, carrying it around for the entire four days to bring back with me."
Paul Hollywood: "This sounds good. It's all about finding the balance. It's about the plums really adding something to it as well, because plums aren't really particularly strong, but they have a bit of acidity."
They do. Thank you, Victoria.
Paul Hollywood: "It's solid. I mean, it cuts quite hard with the knife. It shouldn't do that."
Prue Leith: "Lots of ginger, which I love. What I like is the contrast of the real acidity of the fruit."
Paul Hollywood: "The acidity. Yeah. But not the flavor, because it's brought nothing to the table. The plums bring nothing. Also it's over baked."
