Yasmin, presenting to judges: "Loaf with Egyptian spice mix (dukkah) containing salt, sesame seeds, coriander, cumin, thyme, almonds, plus green peppercorns"


Yasmin: "It's a white loaf, but I'm adding an Egyptian spice mix called dukkah to it. Salt, sesame seeds, coriander. It's cumin, coriander, thyme, sesame seeds, almonds. You can just put it on everything."


Yasmin: "I'm adding green peppercorn. I don't want to add a massive amount in. I don't want it to blow your mouth away. I just want it to be a little bit of a subtle flavor."

Paul Hollywood: "It doesn't look very neat, but it works in so many different ways because you haven't been afraid to put flavor in, and color on it."


Mary Berry: "But with bread, sometimes it's a good thing not to be neat. It's nice to be informal."
