Lisa's bake suffered the day's first structural collapse. A vertical layer cake of orange citrus sponge wrapped around a triple berry filling, finished with a whipped mascarpone exterior. Lisa is a lawyer who joked the tent felt familiar: 'I'm in front of judges a lot. They're either going to say, don't think so today, or they're going to say, marvelous.' Mid-assembly the filling pulled away from the sponge and the cake had to be stabilized for transfer.
Prue diagnosed the failure: 'A filling trying to pull away from a sponge, which is what caused the accident in the first place.' Paul: 'The layering is all beautiful.' Prue continued on structure: 'You've got cream and mascarpone, which is very weak. To try and hold those two together, unless you've chilled it for a day, I think you're always going to struggle.' Saved by flavor: 'But the sponge is delicious.'
