She's not taking shortcuts, roasting her own pecans and making pear rings by hand to create structure that will hold when flipped. She's aiming to impress the judges by adding bite with finely chopped stem ginger. Victoria describes baking as something she normally does in private, then takes to work to share, feeling tense about whether others will like it. This competition reverses that experience as it's all about the preparation process. Her cake turned out messy but she was pleased it went to plan.

Mary Berry: 'I had a worry that it would be too sweet. It's not at all too sweet.' Paul Hollywood praised the even pear structure, calling it 'very professional.' The judges had initial concerns about the ginger cake being over-baked, with Paul asking 'Is it?' when Mary pointed this out, but Mary confirmed the pears could really be tasted, which pleased Victoria.
