Laurence's dessert option is an ode to Southern pie culture filtered through baklava (the Greek-Turkish layered phyllo pastry traditionally built with honey and pistachios).
Laurence: "I'm doing a baklava, and that's going to come with a sweet potato, like, creme anglaise." He swaps in pecans (the dominant Southern nut) and finishes with a maple bourbon syrup. The baklava square is plated alongside a pool of sweet potato creme anglaise (a thin pourable custard).
Laurence: "We thought about kind of vessels for a Southern Greece."
Sherry's tableside: "This is a pecan baklava with a sweet potato creme anglaise."

(Despite reservations on the dessert, the takeout pecan baklava order was singled out very positively by guest comment cards as 'the best carry-out I've had in a very long time.')
