Tristen: "I want to do something called Dorengo. Dorengo is comprised from doro wat. It's the national dish of Ethiopia. And then there's a northern Italian, southern French dish called chicken marengo. Dorengo is a mixture of the two."


Zubair: "Injera shrimp. This is just amazing. Super unique. Favorite thing of this whole night is this shrimp toast, but done injera, so just like you're making a grilled cheese." 


Tristen, talking to Zubair: "Let them fry a little more crispy."


Tristen (preparing to plate) "Hey, Zubair, let's nappé the chicken, please."

"I call this dish Dorengo. It's made up of doro wat, meaning chicken. And pollo marengo. There is a chicken poached in niter kibbeh, an Ethiopian fermented spice butter. Next to that is an injera shrimp toast with a little bit of egg yolk jam, and some butter."

"My chicken was cooked beautifully, but I think the star was the shrimp toast."


"The seasoning is right up to the edge. A couple grains more, it's salty. A couple fewer, and it's not seasoned. And so he's playing his game and doing it really well. He's going to have to mass produce those injera bites."
