Raspberry and Coconut Frangipane Tarts

Sumayah: "This is my coconut frangipane. The texture is slightly different than a regular frangipane. It's really nice. It's less, like, fine, though, because of the coconut, but it's still yummy, I hope."
Voice-over: "Topping her tarts with coconut créme patissiere meringue, and raspberry gel, Sumayah is hoping to make up for last week's disappointing performance."
"I think they look beautiful."

Sumayah: "It's a vanilla paté brisée with a toasted coconut frangipane. A coconut milk créme patisserie, a raspberry jelly and a toasted meringue."
"You've managed to get the coconut to come through really well."
"The textures are good. It's just that it's over baked."
