Rum and Raisin Baked Cheesecake

A classic rum and raisin baked cheesecake that takes only 15 minutes to prepare. Finished with sour cream topping added 10 minutes before the end of baking time. Made with a traditional biscuit base.
Paul Hollywood: 'Your base wasn't quite packed enough. Okay, maybe a little bit more butter just to bind it. Cuz it's broken down into nothing. I think you've got a lovely bake. I think the favor is good and it's so delicate. Actually the rum and raisin is perfect because you haven't overwhelmed the alcohol cuz it's so easily done.' Mary Berry: 'It's absolutely delicious. And I love the cream topping.'
