Seared salmon with a dawadawa cream, mushrooms that have been roasted in lamb fat, and hazelnut gremolata.



Judges: "Let's start with Lana's dish. It was nice to have texture, being that it's this nice, soft salmon and that there was this hazelnut crunch. I've had Dawadawa before, and it is this, like, incredibly punchy ingredient. She used it with an incredible amount of restraint here."
