Secreto Iberico Pork with Romesco

Secreto Iberico Pork with Romesco Sauce, Crispy Rosemary Potatoes, Aioli, Charred Spring Onion, Roasted Red Pepper, and Crispy Jamon
{Georgia}: "Iberico pork with romesco, patatas bravas but without the brava sauce. I'm doing aioli instead, and crispy ham."
{Monica}: "What inspired that?"
{Georgia}: "So my parents used to live in Spain, and so I've spent a lot of time going out there enjoying holidays."
{Marcus}: "One of the best porks there is out there. That's just going to get seared in the pan, rested, and then carved. Some spring onions, which she'll blanch. And then she's going to char them to get that lovely barbecue flavour."
{Monica}: "The romesco sauce is what's going to bring this dish together. She's making it with grilled red peppers. Got almonds running through there and some paprika."
{Marcus}: "We've also got garlic aioli. I suppose my question is, are these two big flavours going to be clashing on the plate?"
{Georgia}: "You're very welcome. So we've got some secreto iberico on a bed of romesco, spring onion that's been torched, some roasted red pepper, and then on the side, you've got some crispy rosemary potatoes with aioli and crispy jamon."
{Leyla Kazim}: "This is a happy looking plate of food." {Jay Rayner}: "Wow, that is a fantastic romesco. The peppers underneath are delicious. The cooking of that pork shoulder is bang on."
{Leyla Kazim}: "And then look at these little darlings, those potatoes. Oh, my goodness. Have you seen the crunch on that? I mean, that's just ridiculously good and lovely with the little bits of jamon iberico on them as well."
{Xanthi Clay}: "Well, I think Georgia knows how to please three critics. The aioli is what it promises to be. It's really punchy with garlic. The only niggle I would have is that there is quite a lot of the romesco sauce."
{Leyla Kazim}: "I'll finish yours if there's any left."
{Marcus}: "And those potatoes. Wow. Love it. Absolutely love this dish. The romesco sauce is fabulous."
{Monica}: "I think Georgia deserves to go through just on that bowl of potatoes. And the aioli itself, I think. Delicious food, happy food."
OVERALL JUDGES VERDICT: A crowd-pleasing triumph. The secreto iberico was cooked bang on. The romesco was fantastic and the potatoes were a showstopper with their incredible crunch and crispy jamon. The aioli was punchy with garlic. Only minor note was Xanthi feeling there was a lot of romesco. Monica said Georgia deserved to go through on the potatoes alone.
