Smoked Beets with Pikliz

Tristen: "I'm going with a little bit of smoked beets, some beet pikliz."
Tristen: "I'm doing grilled beets with beet pikliz and a little bit of pork belly."
Tristen: "I want to kiss the pork belly on the grill, but the grill is full of other people's food and I don't really have time to wait. I need to do the opposite of what I wanted to do. Fry them. I just hope that it doesn't overcook."
Presenting to Judges
Tristen: "These are beets that were braised and glazed in a shadow beni epices, a smoked beet puree, beet pikliz, and pork belly that's been glazed in the reduction of the beet."
Judge: "Tristan, how did you smoke the beets?"
Tristen: "As I was grilling the beets, I was putting the wood underneath it just so that it picked up some of it."
Judges: "Tristen, your dish was technically flawless - beets in several different ways. The pork belly was just a really great vehicle to help carry all that. It was a really beautiful, well thought out, well completed dish."
