Snapper Aguachile Verde

Jonathan's first-course option for Tierra Reina is an aguachile verde (a Mexican coastal preparation of raw seafood briefly bathed in a vivid green chile-lime-cilantro sauce, eaten almost immediately while the fish is still translucent). Jonathan uses North Carolina snapper sliced thinly and tucks in unexpected sweetness with grapes and crisp apple. A single fried plantain chip stands upright in the dish as both garnish and vehicle. Oscar plates it tableside: "Jonathan chose North Carolina snapper, and then he made his aguachile with some grapes, apples. There's a little plantain chip on top." Sieger fired it as the lead first-course option.
{Claire}: "Jonathan's aguachile was a really refreshing way to start the dinner. And I like the little plantain as the vehicle."
{Judge}: "Extremely well balanced all around." {Kristen}: "Worth the 40 minute wait." On the takeout version -
{Michael}: "The plantain has gotten very soggy."
{Gail}: "It's not like a crisp bite. This container spilled the juice all over the place."
{Michael}: "Probably not the best takeout dish."
Judges' table - {Gail}: "Jonathan. Definitely not the first aguachile we've seen around here, but you nailed it. The knife work in there. Whoever helped you or if you did it yourself, doesn't matter."
