Jonathan took the fourth course, working with habanero as his primary chili base and adding small dots of Pepper X - the successor to the Carolina Reaper - as a finishing element. He made a pan seared snapper with a cara cara orange and kumquat slaw, using multiple chili types to layer aromatics alongside heat. The combination of habanero's floral, fruity heat with the brightness of citrus slaw placed the course at the midpoint of the progression. The Pepper X dots were a deliberate and high-stakes finishing move that intensified the heat level of the sauce in particular.
{Judge}: Jonathan's dish is very good. It's just next to Lawrence's, right? I find the heat profile on the sauce a little bit aggressive.
{Judge}: My thing is that if he hadn't put that in the sauce, he would not be high enough in the progression. Totally.
