Kirsty's take on Steak Rossini: fillet steak on a toasted brioche crostini with chicken liver pate, sauteed mushrooms and crispy shallots, served alongside fondant potatoes, asparagus, a pickled walnut ketchup and a red wine, port and Madeira jus.
Kirsty, a waste collections manager from Bolton, learned to cook with her nan and cooks this for her partner Allison on Valentine's Day.
John warns it's not for the faint-hearted with many plates to spin: butter-rich pate, fondant potatoes, walnut ketchup, asparagus.
Anna: the steak is very beautifully cooked, the pate is smooth and elevates the steak.
John: the fondants are golden brown on the outside, soft on the inside, but there are too many elements on the plate and not enough marriage between them. He describes eating round it like 'travelling around a clock'.
