**Stilton, Spinach and New Potato Quiche with Paprika and Walnut Pastry**
Ian, a self-taught baker who loves fresh local produce, sets out to make what he calls a "manly" quiche in a walnut pastry spiked with paprika.
{Ian}: "Pastry can be a cruel mistress if you don't treat her well. I don't actually like quiche, so this is a particular challenge for me." He is careful not to overwork the dough.
{Ian}: "One of the tricks with pastry at this stage is not to overwork it, or it starts to go a bit gluteny and tough."
At presentation he is delighted: {Ian}: "I'm really pleased with the overall effect. Spot on."
{Mary Berry}: "This looks tempting."
{Paul Hollywood}: "There's a lot going on in here. The texture of it is excellent." Turning it over to inspect the base, Mary is impressed.
{Mary Berry}: "Excellent. That's perfect."
{Paul Hollywood}: "It has got a very good bake." Ian was one of the two standout bakers of the signature round and finished 2nd in the technical.
