Jhane is a technology programme manager who grew up in a tight-knit Caribbean family. Her grandma came to the UK in the Windrush generation and was a cook in NHS hospitals. The dish fuses Thai and Caribbean influences; she learned Thai cooking from a family friend named Soup.
Jhane: "Deep-fried chicken and curry was one of the first dishes that I learned to make. We have a family friend from Thailand. His name is Soup. We'd all crowd around and watch him cook."
Anna: "This is inventive."
Grace: "She's making her own Thai green curry paste. There is lime leaves in there. There's lemongrass in there. And then marinating her chicken before it goes in. Genius idea, but I want that chicken crispy."
Grace: "The Thai green curry flavours inside that fried chicken is just perfect. Skin is crispy, getting your lime leaves, your lemongrass, your shrimp paste, that is excellent. I would eat this morning, noon and night."
Anna: "Love the Thai green sauce. It's silky, it's sweet in all the right places. It's spicy in others. Impressive."
Grace: "I could eat the whole lot." Anna: "I could eat all of that."
