Tiramisu Mousse Cups

Lesley: "Okay so we have got a dark chocolate cup with a mascarpone cream a chocolate mousse with a little bit of brandy in. We have a ladyfinger biscuit and we've got some walnut praline." Lesley's ambitious take on a tiramisu featured no fewer than six separate elements as well as a chocolate spoon to eat it with. During the introduction Lesley described doing a dark chocolate cup with mascarpone cream chocolate mousse coffee liqueur a little sponge biscuit walnut praline and topping it all off with a whipped coffee white chocolate ganache with caramelized banana and some of the praline. The judges advised that they liked someone that challenges themselves for two and a half hours and to allow time to set in as it's the critical thing in the challenge.
Paul: "I like the flavor. It's very busy." Paul: "Your chocolate mousse layer is so thin it's almost like a ganache." Paul: "I think you missed the trick of celebrating that mousse. Thank you."
