The key is proper balance - Paul noted about Aaron's: "the balance with the sponge the coffee the caramel and the dark chocolate it's fantastic." Coffee-soaked elements add moisture and intense flavor while coffee caramel provides smooth texture. Biscotti requires double baking: "Biscotti. Italian for twice cooked. So mine needs to be better. So it's gone straight back in."
