26 year old PE teacher Stuart works and lives in Staffordshire. He was taught how to bake from just four years old by his grandmother, a domestic science teacher. His tomato upside down cake features a ginger sponge with black treacle, creating an unfortunate dark color. He planned to add tomato jam to enhance the tomato flavor but made a critical error by forgetting to put it on before the cake went in the oven. Without the jam, it's just a cake with tomato decorations on top. Stuart acknowledged he was original and described himself as a maverick. 

Mary Berry: 'The decoration, I think is lovely, but that ginger cake to me is slightly over baked.' Paul Hollywood confirmed 'It's over baked' and noted there were 'at least no soggy bottoms.' Mary: 'You can really taste the pears' (though this may be mislabeled in transcript). Paul: 'The tomato has added moisture, but hasn't added any taste. It's almost immaterial that it's there.' Stuart acknowledged 'That's what the jam was there for, but forgot to put it in. That's probably why the taste isn't there.' Paul concluded 'It's just predominantly a very dense ginger cake.'
