Kristen's dessert, evoking Turkish cafes on Green Lanes: a layered coffee cremeux with pickled apricot puree dipped in chocolate on a walnut biscuit, topped with a sesame and coriander tempered-chocolate disc, with a yogurt sorbet, served alongside the aroma of fresh coffee. 


Kristen: "It's an ent, which means it's a layered dessert with Turkish flavours. Coffee, apricot, walnut and coriander seeds." She tempered the dark chocolate (50C, down to 29C, back up to 31C) for a clean snap and was anxious about so many elements setting in time.

Anna Haugh: "There's a beautiful ratio of that gorgeous coffee cremeux and then that sweet and sour apricot flavour in the centre. Really bold, a sign of what a wonderful palate you have. Although the discs weren't full discs, the sesame seed really brought more personality and it is super thin. However, the sorbet, for me, is too tart." 


Grace Dent: "This is staggering for the chocolate to be so pretty and unruffled and professional looking. You have this lovely walnutty, buttery biscuit adding another layer of texture. You wanted to take me to the Turkish community in London, and I think you did."
