Kristen's starter: her take on a Vietnamese fish soup, inspired by Vietnamese restaurants in Dalston. Squid 'noodles' with pickled cucumber and cured sea bass topped with marinated tomatoes and crispy shallots, in a chilled tomato, dill and chilli broth. 


Kristen: "My starter is a take on a Vietnamese fish soup. It's squid noodle with a tomato and dill broth and very lightly cured sea bass on the side." She set the squid sheets in a water bath, froze them to slice thinly into noodles, marinated the sea bass in kombu, and made a dill oil.

Anna Haugh: "Your squid noodles were a stroke of genius. They've got a lovely texture, they're wafer thin, they're tender. The broth has got the beautiful elegance you get from a cold tomato consomme. It's got a great kick of spice and then lovely notes of dill. A really vibrant, fresh, beautiful starter." 


Grace Dent: "Sea bass, you've just took the edge off it with a little bit of curing, then it's dotted with these lovely stewed-down tomatoes, and you've got the crunchy onions on top. Masterful use of sweet sour chilli. I love it."
