{Nana}: "I'm gonna bust in the door with West African ingredients like palm oil stock, with crayfish that are near and dear to my heart. Make that happen."

Kristen Kish comforting Nana: "It's okay. It's okay. I get it. It's overwhelming."
{Nana}: "The plates that I'm dropping on you guys are not finished. It's not finished."
{Kristen Kish}: "Whatever happens here, no matter what, you are still phenomenal, chef."
{Nana}: "I did not get everything on the plate, but I have to man up and get these plates in front of the judges, because that's what I came here to do."
At presentation: {Nana}: "I have for you sweet potato and patacon with collard greens sautéed with smoked ham."
BOTTOM of the Murasaki round; up for potential elimination but ultimately saved when Day was eliminated. Kristen Kish: "With the exception of Tom, everyone did vote for you as the least favorite dish." Tom Colicchio: "I actually voted for Nana. I thought it was the most sweet potato of all the dishes. Minimal amounts of protein just to add some flavor, but it was really about the sweet potato. I had a ring mold still on my plate, but the sweet potato itself is very good." General panel: "Obviously, we got varying degrees of Nana's dish. I think her sweet potato was under seasoned." At judges' table: "Nana, obviously, you couldn't get everything on the plate. It was tough. Should I have done less sweet potatoes? Yeah, probably. The other components kind of fell on the wayside, but I was proud of how it tasted." "Clearly a bit of a breakdown, but I didn't know. I thought her cooking was pretty good."
