James: "I'd like to think I've got what it takes to beat the other chefs, but obviously you just never know what's going to happen on the day. I look forward to it."


Classically trained chef James from Carlile started working in kitchens aged 14 and is now chef patron at the Oak at Kwaite.


James: "I love the Northwest. It's been my home since the day I was born. To be part of the Northwest region. I'm immensely proud. My inspiration comes from my surroundings. The area of Cumbria is full of great produce and when you've got good produce, you hopefully cook good food. When I'm in a competitive environment, it's head down, crack on, look after myself. It's about me nailing my dishes and getting through."


James is the head chef and owner at the Oak at Curthwaite in Cumbria, the region where he grew up. He started working in hotels aged 14 and eventually moved to London to join the Connaught. His previous restaurant, the Lounge on the Green, was also awarded two AA rosettes and recognised in the Michelin Guide.
