Seb from Neath has proved himself, going from pot washer to head chef at a restaurant in West Pembrokeshire.
Seb: "If I don't win three full rosettes and a star in the next year, in a bit, I'm going to retrain as a plasterer because it'll be a lot easier and I'll probably get better pay. I grew up tough working class in South Wales. In Neath. I didn't go out to eat until I was a grown man."
"The food I serve here I would class as modern European British cuisine. To represent Wales is obviously every young boy's dream. I think I've got what it takes to get to the banquet if it wasn't for a vegan starter, but we'll see. We'll see how the chips fall. I'm pretty confident or just delusional."
