Amaretto Cherry Sorbet

Cherries infused with amaretto liqueur and churned into a smooth, intensely flavoured sorbet. The amaretto's warm almond notes thread through the fruit, creating a scoop that is simultaneously tart, sweet and aromatic. Made to accompany Luke's tiramisu, it provides a refreshing counterpoint to the richness of the chocolate shell and layered cremeux, while reinforcing the amaretto flavour running through the dessert. A clean finishing element that earns its place on a technically demanding plate.
