Hibiscus Pickled Onions

Thinly sliced red onions pickled in a hibiscus-infused vinegar brine, producing a vivid magenta-pink condiment that is as striking visually as it is useful on the plate. Hibiscus flowers, also known as flor de Jamaica, add a tart berry-like flavour to the brine and deepen the pink colour the onion would develop anyway. A jar of these keeps well in the refrigerator for up to two weeks and pairs brilliantly with tacos, grilled fish, sandwiches, or any dish needing an acid-bright contrast.
