A Turkish-style pastry made from thin layered sheets -- yufka or filo dough - wrapped around a filling of seasoned minced lamb, then baked or pan-fried until the exterior is golden and flaky. Laurence connected the California Pistachio gelato to Turkish cuisine through pistachio's central role in that culinary tradition, and chose borek as its expression. In Turkish tradition, borek is commonly dipped into yogurt. Mei Lin's tasting comment made the connection explicit: the pistachio gelato served alongside stood in for the yogurt, confirming the pairing worked as intended.
