{Judge}: The pickle cayenne is amazing. Delicious. Brittany's is staying there. It's lingering.

A whole cayenne pepper pickled in an acidic brine and placed as a single garnish on top of the shrimp and corn salad. The pickling tempers the raw heat of the cayenne slightly while the acidity of the brine adds brightness to the plate. Unlike the granita in the preceding course, whose heat dissipated immediately, the pickled cayenne delivered heat that lingered on the palate - a quality the judges explicitly noted as the defining characteristic of the component and the reason it worked well at second position in the progression.
