A paper-thin, baked tuile made from a tomato base and finished with a dusting of concentrated tomato powder, adding both a savoury crunch and an intense hit of tomato flavour. Tuiles require precise oven timing and a delicate, confident touch when lifting from the baking tray, as they fracture easily. One broke during Gareth's service but he recovered with remaining mix. When intact, the tuile sits atop the langoustine tartare as a translucent, flavour-forward crown.
