Tomato Tuile

{Judge}: The tuile looked very fragile. Admired for its precision and the fine work required to produce it during a high-pressure final cook. {Judge}: Delicate hands needed.

A paper-thin, baked tuile made from a tomato base and finished with a dusting of concentrated tomato powder, adding both a savoury crunch and an intense hit of tomato flavour. Tuiles require precise oven timing and a delicate, confident touch when lifting from the baking tray, as they fracture easily. One broke during Gareth's service but he recovered with remaining mix. When intact, the tuile sits atop the langoustine tartare as a translucent, flavour-forward crown.
