Instructions

Blend all of the ingredients together in a food processor until as smooth as possible. If the resulting sauce is thick, then add up to a cup of water. Ideally, this will end up with the consistency of a salad dressing. Strain through a fine sieve if you've ended up with a lot of pulp. Taste and season – it should be spicy, fresh, herbaceous and citrusy.

Serve with shrimp, scallops or chicken.
