Corwin won the quickfire in Season 22, Episode 4 of Top Chef™ with "Top Scallops" with this ginger beurre blanc.

Ingredients
2 tablespoons shallots, finely chopped 1 tablespoons fresh ginger, peeled and grated 3 tablespoons lime juice 1/4 cup white wine + 2 tablespoons 100 g European butter diced, cold Salt and pepper
Method
Simmer, over medium heat, shallot and grated ginger with lime juice and quarter cup wine until liquid is reduced to about 2 tablespoons.
Whisk in butter, small piece at a time, adding each new piece just before previous one has completely melted and occasionally removing pan from heat to cool mixture and avoid curdling
Sieve the sauce then season with salt and pepper; keep warm while cooking scallops.
