Ingredients
FOR THE SPICED CRACKER DOUGH:
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon dried fenugreek leaves (methi), crushed
1 teaspoon carom seeds (ajwain)
1/2 teaspoon ground turmeric
1/4 teaspoon gochugaru (red chili powder)
1/4 teaspoon asafoetida (hing)
6 tablespoons vegetable oil or ghee
6-8 tablespoons warm water
1 teaspoon cumin seeds for sprinkling
FOR ASSEMBLY:
Extra flour for rolling
Coarse salt for topping
1 tbsp Nigella seeds for garnish (optional)

PREPARE THE TRADITIONAL SPICE MIX:
1. In large bowl, combine flour, salt, crushed fenugreek leaves, and carom seeds.
2. Add turmeric, chili powder, and asafoetida if using.
3. Whisk dry ingredients thoroughly to distribute spices evenly.
4. These are the flavors from Chetna's childhood home.
CREATE THE DOUGH:
5. Make well in center of flour mixture, add oil or ghee.
6. Rub oil into flour until mixture resembles breadcrumbs.
7. Gradually add warm water, starting with 6 tablespoons, mixing until dough comes together.
8. Dough should be firm but pliable, not sticky. Add more water if needed.
9. Cover and rest 20 minutes for easier rolling.
EFFICIENT ROLLING TECHNIQUE:
10. Divide dough into 4 equal portions for easier handling.
11. Roll each portion into thin sheet, about 1/8-inch thickness.
12. Cut into uniform rectangles or ovals, approximately 3 inches long.
13. Aim for consistent thickness throughout for even baking.
14. Re-roll scraps to make additional crackers.
TEXTURE AND FINISH:
15. Roll thin enough to achieve crisp texture when baked.
16. Use knife tip to score decorative lines or patterns.
17. Sprinkle with cumin seeds and coarse salt.
18. Press toppings lightly into surface to adhere.
BAKING FOR PERFECT RESULTS:
19. Preheat oven to 375°F. Line baking sheets with parchment paper.
20. Arrange crackers on sheets without touching.
21. Bake 8-12 minutes until golden brown and crisp.
22. Crackers should break cleanly when cooled.
23. Rotate sheets halfway through for uniform color.
