Jamaican Brown Chicken (in a savory bun)

Ingredients
MARINATE
500g diced chicken
1 tbsp dark brown sugar
2 tspn Jamaican Browning Sauce
4 cloves black garlic, chopped
0.5 tspn salt
1 tspn paprika
1 tbsp organic tomatillo powder
1 tspn ground ginger
0.5 onion, diced
0.5 red bell pepper, diced
0.5 yellow bell pepper, diced
1 fresno chili pepper, deseeded and finely diced
1 habanero pepper, deseeded and finely diced
1 tbsp oil
2 tbsp ketchup
1 cup chicken broth
1 batch of Jamaican Coco Bread
Melted butter
Instructions
In a large bowl, put all the marinate ingredients and use gloved hands to combine well. Leave to rest for at least an hour.
Later, in a large based pan, heat the oil, add chicken and sear it for 3 minutes then remove the chicken, turn down the heat and add everything else to the pan (leaving any liquid behind in the marinate bowl). Cook gently until softened, for about 5 minutes. Add chicken back to pan along with chicken broth and ketchup.
Bring mixture to a simmer and simmer for 30 minutes, stirring occasionally.
To assemble, cut the bread dough into 10 equal portions (each should be about 80 g) and roll each portion into a circle of about 6” diameter. Pile chicken and a little gravy into the center of the dough and roll the dough into a bun. Put the seam on the base. Brush with melted butter and cook in a pre-heated oven at 400ºF for 20 minutes. Rest on a wire tray.
