Ingredients
FOR THE COCONUT MERINGUE NESTS:
4 large egg whites, room temperature
1 cup caster sugar
1/2 teaspoon vanilla extract
1/4 teaspoon coconut extract
1/3 cup desiccated coconut, finely chopped
1 teaspoon white vinegar (prevents cracking)
1 teaspoon cornstarch (prevents cracking)
FOR THE SHARP PINEAPPLE CURD:
1 cup fresh pineapple juice
1/4 cup pineapple, finely diced
1/2 cup granulated sugar
3 large egg yolks
2 tablespoons cornstarch
3 tablespoons butter
2 tablespoons lime juice
Pinch of salt
FOR THE RUM CREAM:
1 cup heavy cream
2 tablespoons powdered sugar
2 tablespoons non-alcoholic rum extract
1/2 teaspoon vanilla extract
FOR THE LIME GEL:
1/2 cup fresh lime juice
1/4 cup granulated sugar
1 packet (2 1/4 tsp) unflavored gelatin
2 tablespoons cold water
Green food coloring (optional)
FOR THE RUM CARAMELIZED PINEAPPLE:
1 cup fresh pineapple, diced
1/4 cup brown sugar
2 tablespoons butter
2 tablespoons non-alcoholic rum extract
1 tablespoon lime juice
Instructions
MAKE THE IMPROVED COCONUT MERINGUE:
1. Preventing cracks: Preheat oven to 200°F. Line baking sheets with parchment.
2. Prue's amazed technique: Beat egg whites until soft peaks form.
3. Gradual sugar: Add superfine sugar 1 tablespoon at a time, beating well between additions.
