1 cup caster sugar

FOR THE LIME GEL:
1/2 cup fresh lime juice
1/4 cup granulated sugar
1 packet (2 1/4 tsp) unflavored gelatin
2 tablespoons cold water
Green food coloring (optional)
FOR THE RUM CARAMELIZED PINEAPPLE:
1 cup fresh pineapple, diced
1/4 cup brown sugar
2 tablespoons butter
2 tablespoons non-alcoholic rum extract
1 tablespoon lime juice
