DOUGH 2 cups all-purpose flour 2 sheets nori, finely ground 2 tablespoons sesame seeds, toasted and ground 1 teaspoon salt 6 tablespoons cold butter, cubed 1 egg yolk 4-5 tablespoons ice water
FILLING 2 medium sweet potatoes, diced 1 cup kimchi, drained and chopped 6 strips bacon, cooked and crumbled 1 small onion, diced 2 cloves garlic, minced 1 teaspoon ginger, grated Salt and pepper to taste
Method
Make the dough: Mix flour, ground nori, ground sesame seeds, and salt. Cut in cold butter until mixture resembles coarse crumbs. Add egg yolk and ice water gradually until dough forms. Wrap and chill 30 minutes. Prepare filling: Roast diced sweet potatoes at 400°F for 20 minutes until tender. Sauté kimchi in a dry pan for 5 minutes until slightly caramelized. Mix with sweet potatoes, bacon, onion, garlic, and ginger. Season and cool completely. Assemble: Roll dough thin, cut into 6-inch circles. Fill with 2-3 tablespoons filling, fold into half-moons, and crimp edges. Brush with egg wash. Bake: 375°F for 20-25 minutes until golden brown.
