4 large egg whites, room temperature 230g (1 cup + 2 tbsp) caster sugar 30g jasmine rice powder 1 teaspoon ground cardamom Pinch of salt

Method

Preheat oven to 200°F (95°C). Whisk egg whites to soft peaks. Gradually add sugar, whisk to stiff, glossy peaks. Gently fold in rice powder, cardamom, and salt. Pipe or spoon into nest shapes on parchment-lined baking sheets. Bake for 2-3 hours until crisp and dry. Cool completely on trays.
