Whisk egg whites to soft peaks.
Gradually add sugar, whisk to stiff, glossy peaks.
Gently fold in rice powder, cardamom, and salt.
Pipe or spoon into nest shapes on parchment-lined baking sheets.
Bake for 2-3 hours until crisp and dry.
Cool completely on trays.
