Adding Fruit Without Compromising Texture

When adding fresh fruit like banana or pears to flapjacks, consider moisture content. Wet fruits can make the mixture too soft and affect binding. Pat fruit dry before adding, or use freeze-dried alternatives. If using fresh fruit, balance with extra oats or reduce liquid ingredients slightly. Bananas should be very ripe for flavor but drained of excess moisture. Consider cooking fruit briefly to remove excess water first.
