Bavarois

A bavarois is a classical French set cream dessert made from a creme anglaise base enriched with whipped cream and set with gelatine. It sits between a panna cotta and a mousse in texture: firmer than panna cotta but with more aeration and richness. The setting agent must be precisely measured - too much and the result is rubbery, too little and it will not hold its shape. Flavourings such as malt extract, coffee or fruit purees are folded into the base before setting. Unmoulding onto the plate requires a gentle warm hand around the mould.
