Chojang, Korean Dipping Sauce

Chojang, sometimes called chogochujang, is a Korean dipping sauce built on gochujang, the fermented red chilli paste central to Korean cooking. Whisked together with rice vinegar, sugar, sesame oil, garlic, and sometimes mustard, chojang balances fiery heat with bright acidity and a mellow sweetness. It's most often paired with raw fish, steamed vegetables, or cold noodle dishes, where it acts as both seasoning and dressing. Making it at home takes minutes: start with equal parts gochujang and rice vinegar, then adjust sugar and sesame to taste. Quality gochujang matters enormously, so look for traditionally fermented brands rather than mass-market versions for the best depth.
