Haemul Pajeon

Haemul Pajeon

Haemul pajeon is a savory Korean seafood and scallion pancake beloved across Korean households. The batter is typically a simple mixture of flour, water, and egg, and the seafood — usually squid, shrimp, and oysters — is folded in with green onions before pan-frying. A key lesson from the show: the coarseness of your ingredients directly affects the texture of the pancake. Ingredients cut too coarsely make the pancake denser and heavier. For home cooks, keep scallions thinly sliced and seafood in bite-sized but uniform pieces for a lighter, crispier result. Always serve with a dipping sauce of soy sauce, sesame oil, rice wine vinegar, and gochugaru for balance and contrast.
