King Oyster Mushroom

King oyster mushrooms, also known as trumpet royale or eryngii, are large, firm mushrooms with a thick, cylindrical stem and a small, flat cap. Unlike many varieties, the stem rather than the cap is the prized part. Their texture is dense and meaty, holding its structure during long cooking, which makes them well suited to pureeing or slicing and roasting. They carry a clean, concentrated mushroom flavour with mild umami depth. When pureed with butter and stock they produce a smooth, intensely savoury result that works well alongside chicken, pork or any rich meat preparation.
