Lamington

A lamington is Australia's national tea cake: a cube of vanilla or chocolate sponge dipped in thin chocolate icing, then rolled in desiccated coconut. Variations include a layer of raspberry jam through the middle. The defining textures are the soft tender crumb, the slightly set chocolate shell, and the dry crunch of coconut. To get the icing thin enough to coat without bogging the sponge down, warm it to body temperature and use day-old sponge so it absorbs less liquid.
