Achieving the nutty depth that judges praised requires understanding brown butter stages and proper timing to prevent burning. Heat butter over medium heat, stirring constantly as it melts, foams, and begins to turn golden. Watch for color change from yellow to amber and listen for crackling sounds as water evaporates. The butter is ready when it smells nutty and toasted with brown bits (beurre noisette) visible at bottom. Remove from heat immediately - residual heat continues cooking. Cool slightly before adding other ingredients to prevent curdling. Brown butter adds complex, nutty flavor that elevates simple ingredients.
