Miso as a Roasting Glaze

White miso paste mixed with mirin and sesame oil creates a beautifully balanced glaze for roasting vegetables. The miso provides umami depth and encourages caramelisation due to its natural sugars, while mirin adds sweetness and shine. This combination works particularly well with aubergine, squash, and root vegetables. Apply generously and roast at high heat until the glaze turns golden and slightly sticky.
